The Water Buffalo
Not your usual dairy cow but more like your family dog, just a lot larger. Martin and Lori's farm just north of the village of Stirling, Ontario houses about 500 water buffalo, cats, horses and a smiling dog! We currently have over 500 buffalo, 130 of which we are milking now. We ship our milk to factories who make mozzarella, ricotta and other fine cheeses. We don't process cheese on the farm, we are too busy milking and caring for the buffalo! The water buffalo is an incredible species and is the primary source of dairy in many countries. Fifteen per cent of the world's milk supply comes from water buffalo. In Italy there are more water buffalo milked than Holsteins in Ontario. There are about 170 million water buffalo worldwide with two types; swamp and river. Swamp are primarily used for meat and draught while river a best for milking. As calves they range from 80-100 pounds while the adults reach up to weights of 2600 pounds.
The interesting fact about water milk is that it contains lactase. Lactase is the enzyme your body needs to break down lactose. If you are lactose intolerant, talk to your doctor or allergist about buffalo milk!
Farm tours are by appointment only. Please give us at least 24 hours notice. Self-guided tours are available during business hours and at our discretion. Mozzarella is available in grocery stores who carry Quality Cheese products, especially in the Toronto area. Some stores include Pusateri's, Longo's, Sobey's, Loblaws, St. Lawrence Market and of course, Quality Cheese in Vaughan!

We carry most of the products at our on-farm Buff Stuff Store! If you would like a larger order, please call ahead to ensure availability. Whole, sides or quarters are available upon request.
